Our Favorite Pork Loin Recipe

  1. Preheat oven to 425`. Pare and cut vegetables into rough pieces.
  2. Mix oil, lemon juice, garlic, rosemary, salt, and pepper. Coat vegetables and apples in mixture. Drain vegetables and place in a 9 x 13 pan. Retain the mixture.
  3. Place the loin on the bed of vegetables and apples. Coat thoroughly with the oil mixture.
  4. Bake uncovered in 425` oven until thermometer inserted in thickest or most central part of roast reads 145`F.
  5. Remove from oven and allow to rest ten minutes before carving.
  6. Serve on a bed of roasted vegetables and top with liquid from pan. (This can be thickened with corn starch and water if desired.)
Recipe Notes

The steam from the vegetables helps keep the roast moist and succulent.  I love dishes like this for company.  I pop it in the oven and tidy up.  When my guests arrive, the house looks and smells great.  Then, all that caramel colored garlicky goodness comes out of the oven, and I look like a kitchen diva!
